Will it take a lot of time to prepare the food I buy from local farmers?
No! With a little flexibility and creativity, it’s easy. First of all, there are no rules. You don’t have to cook like your mother, or like a restaurant. You can fix dinner based on what was available, and not on what the recipe called for. Seasonal variations in soups, stews, pasta sauces and ragouts are delicious and fun. Also, we eat lots of raw fruits and veggies. Not only are they healthy, but they’re quick and easy, and the kids love ‘em. At markets and stores, you can look for value-added products, like shelled peas, apple sauce or jams, to simplify work at home. Prepare a dish or two on the weekend, and make enough to freeze for another couple of meals. Just do something. Don’t beat yourself up if you can’t eat local all the time, at every meal, or even every day. Remind yourself why you’re eating local. Keep going. Chances are, it’ll snowball.
